Bread Flour 1000 gr
Sweet Potato Flour 30 gr
Sorbitol 190 gr
Salt 12 gr
Dry Yeast 15 gr
Water 450 gr
Whole Egg 100 gr
Skim Milk Powder 10 gr
Modified Starch 10 gr
Colorant 10 gr
KANEKA Improver® Concentrated ST GL 20 gr
KANEKA® Margarine 25 G 3 120 gr

Filling

KANEKA Filling® Sweet Malaka FL GM 240 gr
KANEKA Filling® Pandan Sarikaya Flavor FL GH 240 gr

Process
  1. Put all no. ingredients into mixer bowl. Mixing for 2 minutes at low speed, continue mixing for 5 minutes at medium speed.
  2. Add no. ingredients into the dough, mix for 2 minutes at low speed, 5 minutes at medium speed.
  3. Rest the dough for 30 minutes.
  4. Divide into 45 gr and rest for another 20 minutes.
  5. Filled with KANEKA Filling® 6 gr each, put in the mold.
  6. Final proofing in 38℃ temperature, with 85% humidity for 70 minutes.
  7. Bake for 25 minutes with lower temperature 160℃ and upper temperature 190℃.
