Babka is a sweet braided bread that originated in Poland and Ukraine. It is prepared with a yeast-leavened dough that is rolled and covered with fillings such as chocolate, cheese or pandan, then rolled and braided before bake. Babka is suitable for breakfast or just a snack waiting for the main meal to arrive.

Bread Flour 500 gr
Refined Sugar 90 gr
Salt 8 gr
Dry Yeast 11 gr
Water 275 gr
Whole Egg 25 gr
Milk Powder 10 gr
KANEKA Improver® Concentrated ST GL 10 gr
KANEKA® Margarine 25 G 3 40 gr
KANEKA Filling® Pandan Flavor SH GM | KANEKA Filling® Choco SH GM | KANEKA Filling® Cheese SH GM @200 gr

Process
  1. Put all no. ingredients into mixer. Mixing for 2 minutes at low speed, continue mixing 6 minutes at medium speed.
  2. Add no. ingredients into the dough.
  3. Mix for 2 minutes at low speed, 6 minutes at medium speed.
  4. Rest the dough for 30 minutes.
  5. Keep in the freezer for 2 hours.
  6. Add no. ingredient and laminate the dough.
  7. Sheeting until the dough 1 cm thickness.
  8. Roll the dough, cut 15 cm in length.
  9. Braided and twist.
  10. Put into the mold.
  11. Final Proofing in 38℃ temperature, with 85% humidity for 85 minutes.
  12. Sprinkle the Dry Coconut | Chocolate Chip | Shredded Cheddar Cheese on the top.
  13. Bake for 35 minutes, with lower temperature 170℃ and upper temperature 180℃.
