Koppe Pan is oblong-shaped white bread similar to an American hot dog bun. It is Japan’s take on bread rolls or hot dog buns. The work is a combination of the French word coupé, meaning cut, and the Japanese term for bread. Eating a koppe pan is one of the great experiences in Japan, so let’s make your day!
Ingredients

Dough

Bread Flour 1000 gr
Sugar 180 gr
Salt 15 gr
Dry Yeast 17 gr
Water 480 gr
Whole Egg 100 gr
Skim Milk Powder 20 gr
KANEKA Improver® Concentrated ST GL 20 gr
KANEKA® Margarine 25 G3 100 gr

Decoration

KANEKA Whipping Cream™ WS Z GM 400 gr
KANEKA Filling® Banana SP GM 480 gr
KANEKA Filling® Mocha FL GM 480 gr

Process
  1. Put all no. ingredients into mixer bowl. Mixing for 2 minutes at low speed, continue mixing for 6 minutes at medium speed.
  2. Add no. ingredients into the dough, mix for 2 minutes at low speed, 5 minutes at medium speed.
  3. Rest the dough for 60 minutes.
  4. Divide the dough into 50 gr each and rest for another 20 minutes.
  5. Shape into hotdog bread.
  6. Final proofing in 38℃ temperature, with 85% humidity for 60 minutes.
  7. Bake for 9 minutes with lower temperature 190℃ and upper temperature 190℃.
  8. Cut the top of the bread surface, piping KANEKA Whipping Cream™ WS Z GM for 10 gr each and KANEKA Filling® Banana SP GM or KANEKA Filling® Mocha FL GM for 12 gr each along the bread.
