Goguma ppang is a typical South Korean food in the form of bread made from sweet potatoes. This food is shaped exactly like a raw sweet potato, but when sliced it is a soft sweet potato bun. The outside is covered in thin and chewy texture bread, while the inside is filled with delicious KANEKA Filling®. Its uniqueness makes many people love it.
Ingredients
Kaneka Product Used

Bread Flour 1000 gr
Refined Sugar 180 gr
Salt 15 gr
Dry Yeast 18 gr
Water 580 gr
Whole Egg 150 gr
Sweet Potato Flour 30 gr
Purple Food Coloring 5 gr
Sweet Potato Flavor 0.5 gr

Kaneka Improver® Concentrated ST GL 20 gr
Kaneka® Margarine 25 G 3 150 gr

Process
  1. Put all no. ingredients into mixer bowl. Mixing for 2 minutes at low speed, continue mixing for 10 minutes at medium speed.
  2. Add ingredients in to the dough. Mixing for 2 minutes at low speed, continue mixing for 5 minutes at medium speed.
  3. Rest the dough for 60 minutes.
  4. Divide the dough into 50 gr each and rest for another 20 minutes.
  5. Flatten the dough.
  6. Filled with the KANEKA Filling® Bitter Choco FL GM 20 gr & KANEKA Filling® Mozzacheese FL GH 15 gr each.
  7. Shape in Ubi shape.
  8. Sprinkle it with sweet potato flour.
  9. Final proofing in 38°C temperature, with 85% humidity for 60 minutes.
  10. Bake for 10 minutes, with upper heat 180°C & lower heat 180°C.
