Our Innovation

Science For a Better Living

Science is the core of KANEKA’s products. The deep scientific exploration was initiated by answering a few simple questions such as “how to make a tastier bread?”, “what makes a softer bread?”, and “how to improve the shelf life of bread?” Instead of making short cuts, KANEKA’s scientists quickly put on their lab coats and explore the deep ends of scientific solutions through continuous research and formulation that resulted in the highest possible product quality.

Innovations from KANEKA Laboratory consistently initiate global changes on both industry perspective and practice. KANEKA employs more than 100 R&D staffs and technical bakers who co-work and co-create with customers through continuous test and feedback sessions, which allows the company to create well over 8,000 bread and pastry-related new recipes every year.

Since the establishment of KANEKA Foods Indonesia in 2013, the company has successfully nurtured expertise in market dynamics by delivering high quality products while building market confidence at the same time. With commitment to food science, KANEKA constantly deliver innovations and significantly contribute to the growth of businesses within the bakery and confectionary industry.

Japanese Bakery

Japanese Bread Culture

KANEKA has been part of developing the Japanese bread culture as its products have constantly evolved to cater the needs of customers.

Although Japanese rice culture is especially famous, the country’s diversity of bread products and the curiosity towards it are constantly increasing. The culture was born in 1875 in the form of Anpan. The Japanese bread invented in Tokyo with cooked and sweetened adzuki beans paste filling. The next revolution came when the US provided bread and skimmed milk in Japanese elementary school cafeterias. Since then, bread has been gradually spread among the Japanese.

Today, Japanese bread makers often rank among the best in the world and artisanal bakeries have settled in almost every city. It is not rare to sight a customer holds a lively conversation with a bakery personnel on which wine or cheese that goes best with a particular baguette. Japanese people are now catered with hundreds of varieties of breads that come in every shapes and sizes.

Japan has become one of the pilgrimage spot for bread enthusiasts, and many of its citizens have grown to be bread epicurean. The focus on taste and texture have turned into one of the critical elements in enjoying bread. Equipped with strong knowledge, talents, and product quality, some bakeries have managed to open their shop in European cities, such as Paris and Dusseldorf, presenting themselves as Japanese bakeries. The bread culture in Japan is a good example of how the importance of quality can lead to major changes in an industry.
